I’ve spoke about cooking potatoes, green beans, and chicken thighs before but I thought it deserved revisiting and a better explanation of how and why this is great for camping.
1. Its delicious.
2. It requirers minimal ingredients and minimal attention.
3. Chicken thighs are amazing.
Heres what I used (as pictured above) four or five potatoes, green beans, four or five chicken thighs, a shallot, garlic, salt and pepper as desired. I use lots of salt and pepper and lots of garlic because its the best. Before cutting my ingredients I prep my fire so every things ready around the same time. Once every things cut and my dutch oven is properly heated I brown the chicken and use the grease leftover to mix my potatoes around in then generously salt and pepper. Next I stack those green beans on! I put the shallots and garlic on top of the beans then the browned chicken on top. hmm salt and pepper more…
Let everything chill in the oven with coals on top and good heat to the bottom for around 45ish minutes. The potatoes cook in that sweet sweet chicken fat and are wonderfully crispy at the bottom. I also use rosemary sprigs but forgot them on this past trip, regardless the meal turned out great even without them.
Also please forgive my last photograph of the final meal. I might have had more than one IPA and really excited to eat!!
